Baked Pork Loin

 

This weekend my husband and I are celebrating our first wedding anniversary. Any kind of celebration in the Shinn house involves food, and one of our go to meals is Pork Loin. It was a sweltering 98 degrees today in Utah, so cooking this on the BBQ was out of the question. We improvised with a baked version, to stay out of the heat :).

Instructions:

Preheat oven to 425 degrees, then spray a cookie sheet with cooking spray.
Trim the fat and slice the tenderloin in half, lengthwise. Lightly cover with sea salt and pepper.

Baked Pork Loin Prep

 

Mince the garlic, then combine with sauces and seasonings in a small bowl. Set aside.

Baked Pork Loin Sauce

In a skillet or pan, heat olive oil on medium-high. Once warm, sear the pork loin (usually 1 minute on each side). Make sure you get the smaller sides by using a pair of tongs.

Baked Pork Loin Searing

Place the tenderloins on the cookie sheet, then brush the BBQ sauce onto each tenderloin. You will have extra sauce, set that to the side.

Baked Pork Loin Basted

Place on center rack and cook for 20-25 minutes, or until it’s reached 145 degrees. About every 10 minutes, brush on another layer of BBQ sauce for extra flavor.

Ingredients
  1. 3 lbs Pork Tenderloin
  2. 3 Cloves of Garlic
  3. 1-1/2" Cup of Sweet Baby Ray's BBQ Sauce
  4. 2 Tablespoons of Worcestershire Sauce
  5. 2 teaspoons of Montreal Steak Seasoning
  6. 1 teaspoon of Flavor God Everything Seasoning
  7. Sea Salt (to taste)
  8. Pepper (to taste)
  9. 2 Tablespoons Olive Oil
