Burrito Casserole

Need something quick and easy? Try our Baked Burrito Casserole. Easy to dress up or down with additional toppings, just like burritos, but in a melted, ooey-gooey, baked form!

When my husband and I first moved in together, one of the first dishes he made me was his “Famous Burrito Casserole”.  It’s quick, it’s easy, and it has become one of our favorite things to make.  

Start off by preheating your oven to 350 degrees. 

Place two large burrito tortillas in a 9 x 13 casserole dish. They should overlap slightly, covering the entire bottom and curling up just a little bit on the edges.

Spread an entire can of refried beans over the tortillas, like so:

Start cooking your ground beef in a skillet on medium heat. Season as desired. We love Flavor God’s Everything seasoning. If you haven’t heard of him, head over to his website here. All of his seasonings are low sodium, no fillers, no MSG, Gluten free, Kosher and can be used with both the Paleo and Vegan diet. But best of all they taste AMAZING.

Back to the casserole, once your meat is fully cooked, drain and spread evenly over the beans.

Now, add one cup of cheddar cheese.

Add the second set of tortillas, then cover in another layer of cheese.

Bake at 350 degrees for 15 minutes. Then, turn your oven to broil for an additional 2 minutes to get a nice crunchy top. 

Ah, would you look at all that gooey cheese…

Ingredients
  1. 1 lb Ground Beef
  2. Optional - Flavor God Everything Seasoning (to taste)
  3. 1 16oz can of Refried Beans
  4. 4 Large Burrito Tortillas
  5. 2 cups Cheddar Cheese
Instructions
  1. Preheat oven to 350 degrees.
  2. Place two large burrito tortillas in a 9 x 13 casserole dish. They should overlap slightly, covering the entire bottom and curling up just a little bit on the edges.
  3. Spread an entire can of refried beans over the tortillas.
  4. Start cooking your ground beef in a skillet on medium heat. Season as desired.
  5. Once cooked, drain and spread ground beef evenly over the beans.
  6. Sprinkle one cup of cheddar cheese over the beef.
  7. Add second set of tortillas, then cover in another cup of cheese.
  8. Bake at 350 degrees for 15 minutes. Then, turn your oven to broil for an additional 2 minutes to get a nice crunchy top.
  9. Serve and enjoy!
