Quinoa Taco Bowls

 

Today’s recipe is super easy, because the crock pot does most of the work for you! It’s also extremely easy to make this as mild or spicy as you like, by choosing which salsa and taco seasoning you use. You could even make this 100% clean eating if you make your own taco seasoning from scratch!

Spray your crock pot with Pam.

Place chicken breasts on the bottom, then cover with half a packet of taco seasoning.

Add corn and beans to the crock pot. You’ll see in the photo I forgot to drain mine :(, make sure you drain the liquid before adding yours! 

Chicken Rice and Beans

Add the jar of salsa, then cook on low for 6 hours. 

About fifteen minutes before the crock pot is done, start cooking your quinoa according to the package directions. 

When the crock pot is done, shred your chicken with two forks and mix well. 

In a bowl, add a scoop of quinoa and a scoop of the crock pot mix. Mix well and serve.

You can add whatever taco toppings you like! Sprinkle some cheese, add some sour cream, green onions… make it your own!

  1. (1) 15 oz can of Black Beans
  2. (1) 15.25 Can of Corn
  3. (1) 24 oz jar of Salsa
  4. 2 - 4 Chicken Breasts
  5. 1/2 Packet of Taco Seasoning
